Ingredients
  

  • 1 lb ground Wagyu beef
  • 4 brioche burger buns
  • 4 slices aged white cheddar cheese
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp unsalted butter
  • Caramelized onions optional
  • Roasted garlic aioli optional

Instructions
 

  • Divide the ground Wagyu beef into four equal 1/3 lb portions and shape them into patties, being careful not to overwork the meat.
  • Season the patties with kosher salt and freshly ground black pepper on both sides.
  • Heat a cast-iron skillet over medium-high heat and melt the butter.
  • Place the seasoned Wagyu patties into the skillet and cook for 2 minutes on each side for a nice sear.
  • Flip the patties, then place a slice of aged white cheddar on each patty. Continue cooking for 2-3 minutes more until the burgers are medium-rare and the cheese has melted.
  • Assemble the burgers by placing each patty on a brioche bun. Add any desired toppings, such as caramelized onions and roasted garlic aioli.
  • Serve immediately and enjoy!

Notes

For a perfect medium-rare burger, aim for an internal temperature of 130-135°F.
Let the burgers rest for 5-10 minutes after cooking to keep them juicy.
