Mexican Tater Tot Casserole

Ingredients
  

  • For the Casserole:
  • 1 pound ground beef or ground turkey
  • 1 medium onion diced
  • 1 red bell pepper diced, optional
  • 2 garlic cloves minced
  • 1 packet taco seasoning or homemade equivalent
  • 1 can 15 oz black beans (drained and rinsed)
  • 1 can 15 oz corn kernels (drained)
  • 1 cup salsa mild, medium, or hot depending on preference
  • 2 cups shredded cheddar cheese divided
  • 1 bag 32 oz frozen tater tots
  • Optional: Fresh cilantro chopped, for garnish
  • Optional: Sour cream or guacamole for serving

Instructions
 

  • Preheat the Oven : Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish.
  • Cook the Beef :
  • In a large skillet over medium heat, cook the ground beef until browned, breaking it into small pieces with a spatula. Drain excess grease if needed.
  • Add the diced onion, red bell pepper (if using), and minced garlic. Sauté for 3–4 minutes until softened.
  • Stir in the taco seasoning, black beans, corn, and salsa. Cook for 2–3 minutes until heated through.
  • Assemble the Casserole :
  • Spread the beef mixture evenly in the bottom of the prepared baking dish.
  • Sprinkle 1 1/2 cups of shredded cheddar cheese over the beef mixture.
  • Arrange the frozen tater tots in an even layer on top of the cheese.
  • Bake the Casserole :
  • Bake in the preheated oven for 30–35 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and sprinkle the remaining 1/2 cup of shredded cheese over the top. Return to the oven for 2–3 minutes, or until the cheese is melted.
  • Serve :
  • Let the casserole cool slightly before serving. Garnish with chopped fresh cilantro if desired. Serve with sour cream or guacamole on the side.

Notes

Substitute ground beef with shredded chicken or plant-based meat for a different protein option.
Use gluten-free taco seasoning and tater tots for a gluten-free version.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
Freeze individual portions for up to 3 months. Thaw overnight in the refrigerator before reheating.
