Ingredients
  

  • 1 block firm or extra-firm tofu
  • 1-2 tablespoons avocado or grapeseed oil for frying
  • 1 cup fresh cilantro leaves
  • 2 cloves garlic minced
  • 1/4 cup roasted cashews or pine nuts
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: 1-2 tablespoons unsweetened almond milk or water for creaminess
  • Optional Add-ins:
  • Vegetables like bell peppers snap peas, or broccoli
  • Spices and seasonings like ginger red pepper flakes, or soy sauce

Instructions
 

  • Press the Tofu:
  • Place the tofu on a paper towel-lined plate and press gently for 15-30 minutes to remove excess moisture.
  • For a firmer texture, place the tofu between two heavy objects and press for 30-60 minutes.
  • Prepare the Cilantro Sauce:
  • In a food processor or blender, combine cilantro, garlic, and nuts. Pulse until coarse.
  • Add lime juice, olive oil, salt, and pepper. Blend until smooth and creamy. For a creamier sauce, add almond milk or water to your desired consistency.
  • Cook the Tofu:
  • Cut the tofu into 1-inch cubes or slices.
  • Heat oil in a large skillet over medium-high heat.
  • Add tofu cubes, being careful not to overcrowd the pan.
  • Fry tofu for 2-3 minutes on each side until golden and crispy.
  • Combine Tofu and Sauce:
  • Once tofu is crispy, transfer it to a bowl.
  • Drizzle cilantro sauce over the tofu and gently toss to coat evenly.
  • Serve:
  • Serve tofu with cilantro sauce over a bed of rice or alongside sautéed veggies. Garnish with fresh cilantro, sesame seeds, or scallions for added flavor.

Notes

Be sure to press the tofu well to ensure it crisps up properly.
If you prefer more heat, add chili peppers or a pinch of cayenne to the cilantro sauce.
For a heartier meal, serve with quinoa or brown rice, or add roasted veggies like bell peppers or broccoli.
Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat by pan-frying or baking at 400°F for a crispy texture.
