Ingredients
  

  • For the Stew:
  • 1 tablespoon vegetable oil or butter
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 4 hot dogs sliced into bite-sized pieces
  • 3 medium potatoes peeled and diced into small cubes
  • 2 medium carrots sliced
  • 1 can 14.5 oz diced tomatoes (undrained)
  • 4 cups chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Fresh parsley chopped, for garnish

Instructions
 

  • Prepare the Base :
  • Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 3–4 minutes until softened.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Add the Hot Dogs and Vegetables :
  • Add the sliced hot dogs to the pot and cook for 2–3 minutes, stirring occasionally, until slightly browned.
  • Add the diced potatoes, sliced carrots, diced tomatoes (with juice), and broth. Stir well to combine.
  • Season the Stew :
  • Stir in the smoked paprika, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low.
  • Simmer the Stew :
  • Cover and simmer for 20–25 minutes, or until the potatoes and carrots are tender. Stir occasionally to prevent sticking.
  • Serve :
  • Ladle the stew into bowls. Garnish with freshly chopped parsley if desired. Serve warm with crusty bread or crackers on the side.

Notes

Substitute hot dogs with sausage links or plant-based hot dogs for a different protein option.
Use canned or frozen vegetables for convenience when camping.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave.
Freeze portions of the stew for up to 3 months. Thaw overnight in the refrigerator before reheating.
